My name is Kirsty Mackay. Here is a little bit about me and where it all began. I have been wanting to write a blog for so long and never took the leap. Now that I am no longer training full-time as a Team GB athlete, I now have some spare time to enjoy and share my passion and love for food, cooking and eating well!
I have been blessed to play for my country from the age of 13 and from there onwards, I grew to appreciate the importance of a healthy lifestyle from a health perspective never mind from an elite athletes’ perspective. I studied a degree in Sport & Exercise Science in Leeds to pursue an education in something that I adored and later went onto to study an MSc in Sport & Exercise Physiology selecting the nutrition modules as my electives. As I studied for my MSc, I trained on a part-time basis with the GB women’s hockey squad, as we became centralised for the London 2012 cycle. Unfortunately, I got a serious back injury which took me out of the game for 13 months and therefore, had to look ahead to the next cycle for Rio 2016.
Thankfully, I successfully made it back onto the pitch and was selected to train on a full-time contract, as part of a squad of 31, for the Rio 2016 cycle in December 2012. I can safely describe the 4 year period as an emotional rollercoaster, enduring many ups and downs across the way but I wouldn’t change it for the world, I travelled the world, met some inspirational people, made lots of friends, created many great memories and achieved my childhood goal of going to an olympic games. Although I never dreamed of actually being a part of a gold medal winning team at an olympics! But life throws many surprises at you and now I am here!
I have never really wanted to preach to people when it comes to eating healthy and I truly believe that everything in moderation is HEALTHY!!! I do eat the ‘not so good stuff’ too. However, so many, typically assume that eating healthy means lettuce, cucumber and tomatoes (my boyfriend for one!) but they couldn’t be far wrong. Therefore, this space is where I hope to refresh peoples’ thoughts about food, become more adventurous with your recipes, whilst savouring new flavours. Mainly my; recipes; food inspirations & experimentations (mostly with Quark) with little bits of everything…such as the places I visit, product reviews, my hockey experiences and some fitness workouts.
I have been substituting Quark in my diet for years in place of creamy based sauces, mayonaise, butter to name a few, because nutrition has played such a major role to date especially in my sporting career. My diet had to be quite tailored, low in saturated fats, sugars & salts and high in protein, due to the speed and strength component of my position as a hockey GK. Quark ticks all of these boxes!
I think that it is one of the most under rated super foods out there and I want to help spread the word! What else is there not to like?
